Mae Ploy

Cauliflower Curry

  • Ingredients:
  • - 1 tbsp olive oil
  • - 3 minced garlic cloves
  • - 1 cauliflower, cut into florets
  • - 2 tsp grated ginger
  • - 1 tbsp brown sugar
  • - 2 tbsp Mae Ploy Red Curry Paste
  • - 1 can of coconut milk
  • - 1 tbsp lime juice
  • - Jasmine rice and coriander, to serve


1. Warm a saucepan on medium heat, then add in the oil and the minced garlic. When the garlic has started to brown, add in the cauliflower. Stir thoroughly, then allow the cauliflower to cook until tender. Set aside.

2. In another saucepan, add the grated ginger, brown sugar, Mae Ploy Red Curry Paste, and the coconut milk. Allow the mixture to come to a simmer, and then stir until the Curry Paste has completely dissolved in the coconut milk. Be sure to season the mixture to your liking!

3. Pour the sauce mixture over the cauliflower, and bring the pan to a simmer. Cook the cauliflower through until it has absorbed all the delicious flavours of the Curry Paste. Just when it is done cooking, stir in the lime juice.

4. Remove the curry from the heat, and top with some fresh coriander. Serve it with the rice of your choice, for a delicious and healthy meal!
